Makes 12 Servings
1 egg
1/4 teaspoon cloves
1/2 teaspoon cinnamon
1 teaspoon baking soda
2 teaspoons ginger
2 cups sifted all-purpose flour
1 cup molasses
2/3 cup boiling water
2 tablespoons margarine
3 packets Sweet ‘N Low
1/4 teaspoon saltalt
Preheat oven to 325F. In large bowl, beat egg with Sweet ‘N Low or preferred sweetener. Melt margarine in boiling water and let it cool so it’s warm to the touch but not hot. Add to egg mixture whisking as you pour. Stir in molasses. Sift dry ingredients together; add to egg mixture and beat until smooth. Spray a non-stick bundt pan or a 9-inch square baking pan. Pour mixture into pan and bake 30-40 minutes, or until toothpick inserted into bread comes out clean.
