Makes 8 Servings<\/strong><\/p>\n

Ingredients<\/h2>\n

1 medium head green cabbage, finely shredded
\n3 tomatoes, seeded, chopped
\n3 carrots, peeled, shredded
\n1\/4 cup fish sauce*
\nZest and juice from 1 large lime
\n4 teaspoons Equal Spoonful or Granulated
\n2 cloves garlic, minced
\n1 teaspoon dried red pepper flakes<\/p>\n

Optional Additions:<\/h3>\n

1 cup shelled edamame
\n1 red pepper, julienned
\n1\/4 cup dry roasted peanuts, chopped
\n1\/4 cup chopped fresh coriander<\/p>\n

Directions<\/h2>\n

Combine all vegetables in large bowl, set aside. Combine fish sauce, lime zest and juice, Equal, garlic and red pepper flakes in a small bowl. Pour over vegetables; toss gently to combine.<\/p>\n

Refrigerate, covered, 1 to 2 hours to allow flavors to blend. Just before serving, sprinkle with chopped peanuts and coriander.<\/p>\n
